Why desktop browsers don't show the mobile version of a website when I zoom in?

I often use my browser split screen with a editor. Often I zoom in on the browser. On a lot of websites (google, stackexchange, github, ...) you can now only see half of the page and you have to scroll left/right a lot. (I tried chrome and firefox)

Why don't they (browser- , web-developers) switch to the mobile website if there is one available?

I'm wondering why this isn't the standard behavior of browsers or if there is a way to get the browser to do this.
